Ingredients:
2 tbsp olive oil
1 medium onion, diced
3 cloves of garlic, minced
28 oz can of crushed tomatoes
1 cup chicken broth
1 tsp dried basil
Salt and pepper, to taste
1/2 cup heavy cream
Instructions:
In a large saucepan, heat the olive oil over medium heat.
Add the diced onion and minced garlic and cook until the onion is translucent, about 5 minutes.
Add the crushed tomatoes, chicken broth, dried basil, salt, and pepper to the saucepan.
Bring the mixture to a boil, then reduce heat and let it simmer for 10-15 minutes.
Remove the saucepan from heat and use an immersion blender or transfer the mixture to a blender to blend until smooth.
Return the blended mixture to the saucepan and add the heavy cream.
Stir well and heat through, but do not boil.
