Keto Cilantro Lime Chicken Skewers

  • 1 1/2 lbs boneless, skinless chicken breast, cut into 1-inch cubes

  • 1/2 cup cilantro leaves, chopped

  • 1/4 cup fresh lime juice

  • 3 tbsp olive oil

  • 2 cloves of garlic, minced

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Wooden skewers (soaked in water for 30 minutes to prevent burning)


  1. In a large bowl, whisk together the cilantro, lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper.

  2. Add the chicken cubes to the bowl and stir to coat in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

  3. Preheat the grill to medium-high heat.

  4. Thread the chicken cubes onto the soaked wooden skewers, leaving about 1/4 inch of space between each piece.

  5. Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is fully cooked and the outside is lightly charred.

  6. Remove the chicken skewers from the grill and serve hot, garnished with additional cilantro leaves, if desired.
