Simply add the spices to your slow cooker with the beef and broth, and you'll have a delicious and satisfying meal in no time!

Ingredients:

  • 2 lbs boneless beef roast (chuck or brisket)

  • 2 tbsp olive oil

  • 1 onion, chopped

  • 4 cloves of garlic, minced

  • 2 tbsp tomato paste

  • 1 tbsp chili powder

  • 2 tsp ground cumin

  • 1 tsp dried oregano

  • 1 tsp smoked paprika

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground cloves

  • 1 cup beef broth

  • 1/4 cup apple cider vinegar

  • 2 tbsp lime juice

  • Fresh cilantro, chopped (optional, for garnish)

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook until it is soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

  2. Add the tomato paste, chili powder, cumin, oregano, paprika, salt, pepper, cinnamon, and cloves to the skillet and cook for 2-3 minutes, stirring constantly, until fragrant.

  3. Transfer the contents of the skillet to the slow cooker.

  4. Add the beef broth, apple cider vinegar, and lime juice to the slow cooker and stir to combine.

  5. Add the beef roast to the slow cooker, making sure it is submerged in the sauce.

  6. Cover the slow cooker and cook on low heat for 8-10 hours, or until the beef is tender and falling apart.

  7. Remove the beef from the slow cooker and shred it using two forks.

  8. Stir the shredded beef back into the sauce in the slow cooker.

  9. Serve the barbacoa beef hot, garnished with fresh cilantro, if desired.
