Simple and Flavorful Oven-Roasted Vegetables

Looking for a quick and easy side dish that's packed with flavor and nutrients? Look no further than this simple and delicious oven-roasted vegetable recipe that is the perfect addition to any meal!



This dish is made with a mix of mushrooms, red bell pepper, zucchini, broccoli, garlic, and red onions, but this can be adjusted with any of your favorite vegetables.

Ingredients:

  • 1 lb mushrooms, cleaned and sliced

  • 1 red bell pepper, diced

  • 1 medium zucchini, chopped

  • 1 head of broccoli, chopped into florets

  • 4 cloves of garlic, sliced

  • 2 tbsp avocado oil

  • 1 red onion, sliced

  • 1 tsp Italian spice

  • Salt and pepper, to taste


Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Line a large baking sheet with parchment paper or aluminum foil.

  3. In a large bowl, mix together the mushrooms, red bell pepper, zucchini, broccoli, garlic, avocado oil, red onion, Italian spice, salt, and pepper.

  4. Spread the mixture out evenly on the prepared baking sheet.

  5. Roast for 25-30 minutes, or until the vegetables are tender and lightly browned. Stir the vegetables once or twice during cooking to ensure even roasting.

  6. Serve the roasted vegetables immediately, as a side dish or as a main course.
